Egg Foo Young

One of my NEW favorite recipes...Good for Breakfast, Lunch or Dinner!!
Ingredients
· 8 eggs
· 1/4 pound thinly sliced ham, finely chopped
· 1 cup fresh bean sprouts, a few healthy handfuls
· 1/2 cup shredded carrots
· 1/4 pound shitake mushrooms, stemmed and thinly sliced
· 1 cup baby bok choy, shredded
· 1 8-ounce can water chestnuts, drained and finely chopped
· 1/4 red bell pepper, very thinly sliced
· 1 bunch scallions, white and green, thinly sliced on an angle
· 1 inch fresh ginger root, peeled and grated, plus 2 thin slices
· 1 large clove garlic, grated or pasted
· Salt and pepper
· 1 tablespoon cornstarch
· 1 cup chicken stock
· 1/4 cup tamari, aged soy sauce
· Hot sauce, 1 teaspoon
Yields: Serves 4

Preparation
Preheat a griddle pan over medium heat and brush it with some oil.
In a large mixing bowl, whisk the eggs then stir in ham, bean sprouts, carrots, mushrooms, bok choy, water chestnuts, bell pepper, scallions, grated ginger and garlic. Season with salt and pepper and mix until completely combined. Using a large spoon, drop about 1/2 cup of the mixture onto the preheated and oiled griddle. Cook like pancakes, about 2-3 minutes per side, until golden.
Meanwhile, combine cornstarch with a splash of chicken stock to dissolve. Place remaining stock, tamari, cornstarch, hot sauce and sliced ginger in a small pot. Bring Thicken 3 minutes or so to coat a spoon. Remove sliced ginger and turn off heat.
Serve 2 Egg Foo Young cakes with gravy poured over the top per person.

New Job …..New Start!!

Adam got a new job yesterday and I couldn't’t be more EXCITED!! The last few weeks (8) have been really stressful. I knew stress caused heath issues…..But I would of never guess It would cause me not to be able to move my neck. The pain has been so extreme I have been sleeping sitting up (I need a massage…wink…wink) I am going to start implementing more stress free activates in my life to help counter act the stress. If you have any ideas please let me know!!

New Family Tradition


My first holiday season as a married wife/with-out my family
:(….I get nerves just thinking about it! (I don’t do well with change)
I had a hard time holding back tears when my mom called to tell me they weren’t coming down for Christmas/New Years (I just had to have my 35,000 wedding). I have never spent Christmas without them; it’s defiantly going to be different. I guess it’s time to make our own family tradition!!
Let all pray I don’t have a brake down right in the middle of opening gift’s……

Repurpose an old frame for a vanity tray that’s pretty as a picture. Place a piece of colored paper or fabric inside as a finishing touch.
Give Easter eggs a year-round use (and save on resalable bags) by filling them with snacks like crackers or Cheerios.


Make no-mess pancakes with the help of a ketchup bottle: Pour in batter, then squeeze out precise portions.
Transform a six-pack holder into a condiment tote that’s ideal for summer picnics. Vegetable oil will put a shine on leather shoes. Use a damp cloth to remove any dirt, then run a soft cloth with a drop of oil over the surface to (literally) add polish. A Twister game mat makes a spot-on tablecloth for a child’s birthday party: Sticky spills and icing wash right off.

French Onion Soup with Cheesy Croutons

Ingredients:
6 medium onions
4 tablespoons butter
3 cloves garlic, finely chopped
2 fresh bay leaves
2 tablespoons fresh thyme, finely chopped
Salt and pepper
1 cup dry white wine
1 quart beef stock
2 tablespoons Worcestershire sauce
1 baguette, ends trimmed, sliced into 16 rounds about 1-inch thick
1/2 pound Gruyère cheese, shredded
4 tablespoons good quality dry sherry (optional)


Preparation
Heat a heavy soup pot over medium heat while thinly slicing the onions. Add the butter to the pot and melt. Add the onions, garlic, bay leaves, thyme, salt and pepper and gently caramelize, stirring frequently, for 30 minutes. If the onions begin to brown too quickly at the edges before they caramelize, turn the heat down a bit. Deglaze the pan with the wine, then let reduce for 1 minute while stirring. Add the stock and the Worcestershire sauce and simmer for 15 minutes more.Meanwhile, place an oven rack in middle of the oven and heat the oven to 250˚F.Place a cooling rack over a baking sheet and arrange the bread slices on it. Toast the bread for 15 minutes. Switch the broiler on. Top the bread with lots of mounded cheese and broil for 2-3 minutes to melt the cheese.Ladle the soup into shallow bowls and stir in a tablespoon of sherry per bowl, if desired. Set four cheesy croutons into each bowl and serve.

Puppy Love

Kingston (our Cocker Spaniel) has always been mommy’s little protector. Kingston and I have been attached every since I got sick, he loves spending time on my lap and taking naps with me. He really doesn’t like it when Adam tries to hug and kiss me Kingston thinks he need to be right in the middle of us (he should be the one giving kisses)….lol I think it’s funny, Adam not so much!
Adam and I were recently “play” fighting and Kingston got VERY upset and started growling and barked at Adam, I guess he didn’t get the memo about the “play” part! Things have recently started to get better ever since Adam has been staying home during the week I think they are bonding more….I can only imagine what things are going to be like once we have a baby.

Labor Day Weekend aka Girls Weekend!!

I am so lucky to have amazing friends in my life…… Labor Day Weekend “Little Sarah” came over from MT. to spend the long weekend in Spokane with me! She arrived late Friday night, and like high school BFF’s we stayed up tells midnight gossiping. We spent the weekend shopping, stuffing our faces at Pig out in the Park, Riding the gondolas, manicures/pedicures, Girls Night Out (sushi & drinks w/ Vicky & Dani), Paint your own pottery, and watching Julia Roberts movies. I couldn’t have asked for a better girl’s weekend (Adam included). Speaking of Adam I have to say I have one of the BEST husbands in the whole world. He made us breakfast every single morning and let up gossip with no interruptions every night. Life is good!!

Position Queen

As all of you know I have been reading Tori Spellings book “Mommy wood”. The last chapter I read she was talking about how Tori became obsessed with slathering her pregnant belly with positions & lotions, it made me laugh – That’s me!! (All accept the pregnancy part).

I have a nightly ritual…..
1. Wash Face
2. Toner
3. Lotion
4. Eye Cream
5. Neck Cream
6. Foot Cream
7. Hand Lotion
8. Once a week face mask
9. Etc…

I have been obsessed with Positions & Lotions ever since I was a kid. I think I am afraid of aging (even though my mom looks amazing for her age)….and all she does is wash her face with dial soap and aply lotion.
I would love to know if I am alone on this! Adam thinks I am crazy and I smell like a drug store, but I swear it works.
