Stuffed Zucchini


Ingredients:
1 Large Zucchini
1 lb Hamburger
½ large Onion
1 ½ cup Mushrooms
3 cups Tomato Sauce
1tbs Fresh Garlic
1/2 cups Parmesan cheese
3 cups cooked Rice
Salt
Pepper
Parsley to garnish

Directions:
Cut whole zucchini in half place in glass baking try cut side up. Fill glass baking try 1/3 of the way up with cold water, tent with tinfoil and bake @ 375 for 45 min.
Once zucchini is soft, scoop out the inside of the zucchini and place in bowl. Then mix with all other ingredients, place mixture into hollowed out zucchini top with parmesan cheese and bake @ 350 for 15 min. to melt cheese
